Al-Tabqah est un petit village d'environ 11 000 habitants, situé à quelques centaines de mètres du barrage de l'Euphrate, à la frontière de la Syrie et de l'Iraq. Il s'est constitué progressivement pour accueillir la main d'œuvre nécessaire à la construction du barrage. À la fin des travaux, la population fut encouragée à demeurer sur place (exonération de charges d’électricité, d'eau …). Les habitant d'al-Tabqah, originaires d'Iraq, étaient arrivés en Syrie au début du XXe siècle et s'étaient d'abord installés dans la région de Khabour (nord-est de la Syrie). Ils se composent d'Assyriens et de Chaldéens. Tous les habitants d'al-Tabqah ont pour langue maternelle le soureth, un dialecte néo-araméen oriental qui a ses propres sous-variétés régionales. Cette langue est enseignée à l'école primaire en même temps que l'arabe, langue officielle du pays.

Le pain occupe un rôle central dans l'alimentation des habitants de Sanaa, comme ailleurs sur les hauts plateaux yéménites. À l'ouest du pays, en Tihama, plaine côtière qui longe la mer Rouge, c'est le riz qui se substitue au pain.
À Sanaa, on trouve une grande variété de pains (certains sont confectionnés à des occasions particulières, naissances, mariages, fêtes…), mais il en est deux, l'un à base de farine de froment (malūʒ bərr), et l'autre à base de farine d'orge (malūʒ ʃʕajr) qui, associés au plat emblématique de Sanaa et de sa région, la saltah (à base de farine de fenugrec, ħilbah), constituent l'essentiel du repas de midi, le principal repas de la journée. Traditionnellement, le pain était préparé à la maison dans le four à pain, tannūr, qu'on peut encore trouver dans d'anciennes demeures, où il trône dans la cuisine traditionnelle, dajmah, encastré dans un massif de maçonnerie.

En fonction des saisons, on privilégie les bouillies de céréales (gruaux d'orge préparés avec du lait, du thym et des épices ou gruaux de froment dilués et agrémentés de graisse et de bouillon de viande) ou les plats de légumes frais (tomates écrasées relevées de menthe, de coriandre, d'ail, de sel et d'épices ; ragoût de cornes grecques – variété de gombo – ou d'aubergines, radis blanc) et les mets nappés de lait ou de babeurre. En toute saison, le plat principal est à base de farine de fenugrec ħilbah (Trigonella foenum-graecum).
Cannelle, clou de girofle, poivre, sel, cumin, gingembre, piment, curcuma entrent dans la composition des mets salés ou sucrés et des variétés de pain, mais aussi de la boisson giʃr à base de décoction d'écorces de café, qui est plus communément consommée que le café gahwah. Cette boisson est rehaussée de cannelle, de poivre et de clous de girofle. Les mélanges d'épices spécifiques aux différentes préparations sont généralement apprêtés à la maison, mais on peut aussi se les procurer prêts au souk.

Située dans la vallée de Zabīd, la palmeraie de Ṣwajq est réputée pour être la meilleure palmeraie de la Tihamah, plaine côtière qui longe la mer Rouge. À Zabīd, le palmier-dattier est omniprésent dans la vie de tous les jours : huttes, clôtures, nattes, banquettes, balayettes, éventails, cordes, sacs, sièges et même bateau… sont confectionnés à partir des troncs, palmes et folioles de dattier. La quasi-totalité des parties de l'arbre est exploitée. On ne recense pas moins d'une trentaine de variétés d'arbre et une quinzaine de noms de dattes.

Dans la ville intra-muros, subsistent des îlots de verdure qui jadis occupaient une place très importante dans la structure urbaine de Sanaa : au XIXe s. par exemple, ils représentaient le trois quarts de la superficie de la vieille ville. Ces espaces verts ou jardins urbains sont répartis en « jardins maraîchers », migshama, et « jardins vergers », bustan. Les premiers, biens inaliénables, ou propriétés de mainmorte, waqf, dépendent de la mosquée qui les jouxte, et qui en jouit par usufruit pour l'entretien des mosquées; ces jardins sont irrigués par les eaux usées des bassins d'ablutions des mosquées. Les "jardins vergers" sont en revanche des propriétés individuelles. Habituellement, ces jardins sont entourés d'un mur de pierres et de terre, mais il arrive que des maisons y soient intercalées, et constituent une partie du mur de clôture.
La culture dominante des "jardins maraîchers" est celle d'une variété d'allium, apparentée à la ciboule, bay‘a ; viennent ensuite : radis blanc (gushmi), oignon (basali), luzerne (gadhab), tomates, haricots, piments, menthe, persil… Les jardiniers, dont le nom gashsham est formé sur la même racine qui sert à désigner le "jardin maraîcher" (migshama) et le radis blanc (gushmi), sont assimilés au groupe de statut social inférieur, banu l-khums (littéralement "fils du cinquième") qui compte les métiers dits "vils" : cordonniers, bouchers, barbiers-circonciseurs…
Les engrais ont lontgemps eu pour origine les excréments des animaux et les déchets domestiques que les jardiniers ramassaient une fois par semaine. Aujourd'hui, on recourt à l'engrais chimique. La production maraîchère dessert en partie les maisons du voisinage mais elle est surtout réservée aux marchands de légumes et échoppes des différents quartiers de la ville.

Le village de Nam Tu Thuong (nam « rivière », Tu [nom du torrent], thuong « source, en haut ») se situe au sud-ouest de la province de Lao Caï, district de Van Ban dans une vallée parallèle à celle de Sapa mais plus au sud. Ce village est composé d'une quarantaine de foyers (230 habitants). Il est situé dans une sorte de cirque, sur le flanc d'une montagne, étagé çà et là sur la rive gauche du torrent. Les maisons sont toutes en bois, sans pilotis. Les habitants de ce village se nomment les Mo Piu (Hmong Bjo). Le village de Nam Tu Thuong se répartit sur plusieurs sites : d'un village plus ancien, Nam Can, situé à quelques kilomètres plus haut dans la montagne, sont parties sept familles en 1963. Ces familles ont alors créé le village actuel de Nam Tu Thuong. Certaines familles ont ensuite continué leur migration plus bas en direction de Nam Xe, créant un nouveau village qualifié de Ha, qui signifie « bas ». À Nam Tu Ha vivent d'autres communautés ethniques que les Mo Piu. Le voyage de Hanoi à Nam Tu Thuong dure environ 24 heures. Il commence généralement par une nuit dans un train à destination de Lao Cai, ville située à quelques kilomètres de la frontière chinoise. Le voyage se poursuit par la route jusque Van Ban ("capitale" du district). Le voyage continue ensuite, toujours par la route, jusque Nam Xe, petite bourgade située le long d'un affluent de la rivière rouge. L'accès au village de Nam Tu Thuong se fait à partir de Nam Xe. Il faut y louer des motos (Xe om) pour parcourir les derniers kilomètres. La piste, large au début, se réduit en un sentier abrupt et escarpé, obligeant parfois conducteurs et passagers à mettre pied à terre. L'étape suivante est le franchissement du torrent, sur un pont de bambous ou à gué lorsque le pont a été emporté par les orages. Il reste enfin à grimper 300 m de chemin escarpé à travers les roches, au milieu des animaux vaquant librement (buffles, chiens, volaille, mais aussi petits porcs noirs et ventrus).

Il y a environ 3300 ans – époque de la guerre de Troie en Europe – commença l'une des plus impressionnantes migrations de l'histoire humaine. Les peuples austronésiens, originaires de Taiwan, se sont mis à peupler les îles du vaste Océan Pacifique – depuis l'Indonésie jusqu'à la Nouvelle-Calédonie, Hawaii et l'île de Pâques. Ils traversaient les océans à bord d'imposantes embarcations à voiles, navigant de jour et de nuit, à la lumière des étoiles. C'est ainsi, notamment, que des navigateurs venus du nord-ouest s'installèrent dans les archipels des îles Salomon ou du Vanuatu. Trois mille ans plus tard, les descendants de ces peuples marins sont désormais bien installés dans leurs îles, où ils mêlent les ressources marines aux nourritures terrestres. Les immenses voiliers d'autrefois ont disparu : les voyages au long cours ont désormais lieu dans des bateaux à moteur, ou en avion. S'il subsiste des embarcations traditionnelles, ce sont désormais de plus modestes pirogues à balancier, que chaque famille saura se tailler dans un arbre de l'île. Ces pirogues – ne wake kkë en langue hiw – permettent aux enfants et aux adultes de caboter dans le lagon le long des côtes, en quête du repas du soir.

Même s'il a été christianisé par les missionnaires depuis cent cinquante ans, l'archipel mélanésien du Vanuatu garde encore la mémoire de ses anciens cultes animistes. Ainsi, la demeure de Franklin Woleg, dans l'île de Motalava, est certes placée sous le signe de Jésus ("Jesus is the head of this home")
mais la véritable figure qui compte, pour cet artiste sculpteur, c'est celle de l'esprit ancestral. Un mot essentiel, en langue mwotlap, est natmat : c'est à la fois le défunt qu'on enterre et l'esprit qui lui survit
c'est l'Ancêtre que l'on révère et qui nous a tout appris
c'est l'Esprit bienveillant ou le démon maléfique qui hante les forêts (voir la carte sémantique de natmat, à la page 214 de François 2013). Par métonymie, le même mot natmat désignera toute représentation visuelle d'un Ancêtre, qu'il s'agisse d'une statue, ou d'une coiffe de danse…

Les enfants de l'île de Motalava, dans l'archipel du Vanuatu, aiment jouer à la comptine Gin gin i gen "Pincent pincent les fourmis". Les enfants empilent leurs mains les unes sur les autres, chacune pinçant légèrement celle du dessous : la sensation évoque la morsure des fourmis rouges, dans la forêt. Après le premier couplet de la comptine, la main la plus haute s'aplatit sur celle d'en dessous, laquelle fera de même au couplet suivant – et ainsi de suite, jusqu'à ce que plus aucune main ne soit mordue par une fourmi. À la fin du jeu, tout le monde se lève en riant.
